Our Catering Philosophy
Catering is central to just about every social occasion and as professional caterers we work with you to get it right. Over the years we have developed our philosophies to reflect our passion for great food and as a set of guidelines to how we operate.
- Colour, Style & Design - People always look before they eat - therefore we aim to ensure that the food is presented with style & panache. We achieve this by good menu selection - Chicken breast in a white wine sauce with caulflower & mashed potatoes would look pale & insipid or a totally brown buffet as the chef has fried everything is simply unappealing. Firstly colour should compliment the food and should be natural far better to use beetroot juice or red wine for a deep red than red food colouring. The presentation should be simple, generous without being overworked or thoughtlessly slapped upon a plate or platter. With these considerations the design is planned before the food is even cooked, this is time consuming work, but the result is worth the effort inviting you to take the next step and taste it.
- Taste - Taste is vital - We have found that large mass producing suppliers, rely on preservatives to maintain the life of the food rather than the taste. We hand make 95% of our food from raw ingredients, seasoned with fresh herbs, purchased from suppliers we know and trust, to ensure depth of flavour and freshness. We are working on the other 5%.
- Innovation - We are never complacent and are always on the lookout for new ingredients, ideas, menus, concepts or even just reinventing old favourites - take a look at our Traditional buffet with a modern twist where we have re-invented old buffet favourites.
- Focus: Be good at one thing - As a catering company we are not claiming to be experts in bar hire, Marquee dance floors, or venues, however we have negotiated excellent deals from trusted and reliable specialist companies with whom we have worked with for a number of years. This ensures that we can offer you the full range of services for your function, with one point of contact and one price, whilst at the same time focussing on what we are good at.
- Culturally aware - Go that extra mile to cater for all your guests - We draw from our own experience & knowledge to design menus with halal and kosher foods. We use respected accountable suppliers to provide the ingredients and prepare the food in a separate section of our kitchen.
- Red & Green - because we believe that both carnivours and herbivours should enjoy their food as much as each other. We understand the real difference between vegans, vegetarians, lacto vegetarians & pescetarians and would never ask the rather ignorant question "Vegetarian...Do you eat chicken"?
- We only use vegetarian cheese.
- We only use free range English eggs that have been ethically farmed.
- We use separate cooking utensils and oils
- We make our own pastry and therefore do not use lard in the process.
- We only use trusted suppliers for our ingredients and can use organic on request
- We only make our veggie or vegan food in a seperate area of the kitchen.
- Our innovative veggie food is also loved by meat eaters such as our tasty birds nest eggs (free range eggs wrapped in a cheesy herb & breadcrumb coating).
